I am a physician in Colorado and found you listening to your interview with Juli from PaleOMG, and I’ve since binge listened to all of your episodes! I love your science focus (scratched my need to hear about data and scientific reasoning WHY).
I am working on transitioning into a more whole foods diet from being more vegetarian/vegan and I’m feeling great. However, I look at the saturated fat grams and cholesterol mg on my foods and kind of freak out a bit, especially when looking at the whole day. In med school, saturated fat/cholesterol was tightly connected to heart disease and strokes, but some studies show dietary cholesterol does not necessarily connect to cardiovascular risk (although unclear if that is because all the readings were done fasting?). However, diabetes and insulin sensitivity are clearly worse for cardiovascular problems.
I’m not sure if you learned any more about this during your degrees and certifications (which is likely more current than mine and obviously more nutrition focused) that could be informative!

Ok so you talked about it but when will we see your results, are you going to share your verdict of the best dark chocolate you’ve found? I’m always looking for the darkest cleanest bar that’s still yummy and would love to hear yours!

I like Endangerd Species but my newest favorite is Theo 85% or 70% w/sea salt they are so yummy!
