Sheet pans = life. I figured I’d make all our lives a little easier and more delicious by giving you guys this Meal Prep Sheet Pan Bake! Because sheet pans are basically laziness/efficiency meets totally delicious. There’s only one pan to clean (besides the cutting board), and after you put it in the oven, you don’t have to mind it at all – you’re free to meal prep some other stuff (I’d recommend some hard-boiled eggs, and either a sauce/spice blend!), or, you know, you could go walk your dog, watch some football or trashy tv, or heck, even take a nap. Just remember to set your alarm for a little before the timer will go off!
Speaking of September 1st. I’m going to geek out a little bit here. TODAY, September 1st, 2017 is officially 19 years later. *gasp* WHAAAAAAAAAt. If you have no freaking clue what I’m talking about here, clearly you’re not as much of a Harry Potter nerd as I am…which is totally fine (I guess, ha!).
19 years later is the exact date that the epilogue takes place in the seventh Harry Potter book, when the trio is sending off their kiddos to Hogwarts for the first time, and “all was well.”*mic drop* (Or was it??? Apparently not, according to Cursed Child, regardless of our feelings on that book) . Yeah. It’s been THAT long. This year is also the 10th anniversary of when Deathly Hallows (the book) came out. So basically I’m going to have to read and watch the entire series through some time soon. You think I’m kidding? My best friend and I already have plans to watch the entire series through at one sitting. I believe it’s 19 hours and some odd minutes. Lots of snacks will be involved, *obviously* (snape voice).
- 1 lb chicken breast or thighs
- 1 small head broccoli
- 2 bell peppers, seeds removed, chopped
- 1 medium sweet potato
- ½ cup cherry tomatoes
- 2 Tbsp avocado oil or ghee
- 2 Tbsp your favorite seasoning blend - I used Primal Palate Garlic & Herb!
- Preheat the oven to 400 F.
- Clean and chop all the ingredients so they’re about the same size (think bite-sized!)
- Combine the chopped chicken, broccoli, peppers, tomatoes and potatoes on a large baking sheet lined with parchment paper. Drizzle with 1-2 Tbsp avocado oil or ghee, and toss with 2 Tbsp seasoning of your choice until all the pieces have some seasoning.
- Pop the baking sheet in the oven and bake for 40 minutes at 400, until the ingredients are cooked through.
