Okay, let’s be honest here…who doesn’t love chocolate? I could name a few people, but umm (weirdos). Kidding, more for us chocolate lovers! Anyway. I luuurve chocolate, but do NOT love the things “regular” chocolate, aka your typical halloween candy / gas station / convenience store chocolate that has all sorts of things like soy lecithin, milk powder, and other weird things to extend shelf life, can do to my stomach. And my sugar cravings.
Solution: get some REAL chocolate. With no added junk or filler ingredients, that tastes mouth-wateringly delicious. Usually you’ll get these kind of goodies from small businesses, handcrafted chocolate makers, or amazing companies like Eating Evolved, Alter Eco, Theo Chocolate, and Taza. Because if (slash when, duh) you’re going to eat chocolate, it better be AMAZING. Right?? Don’t settle for crappy stuff that also makes you feel like crap, at least in my case.
Also. I’ve got to admit – I was totally skeeved out by even the idea of eating an avocado mousse/chocolate pudding thing at first. But I used to looove those snack pack chocolate pudding pack things, so I was willing to try pretty much anything to make a grown-up, dairy/gluten/crap-free version of my favorite childhood snack. And this Dark Chocolate Avocado Pudding? Success.
- 1 ripe avocado
- 1 small banana
- ¼ cup coconut milk
- ½ tsp vanilla extract
- 1 Tbsp honey or maple syrup
- 3 Tbsp cocoa powder
- ⅛ tsp sea salt
- cocoa nibs
- unsweetened, shredded coconut
- Banana slices
- Blend all ingredients in a food processor. Top with cocoa nibs, shredded coconut, and additional banana slices, for serving.
