Probably the most appropriate day of the year for a Food Coma Fridays post. I don’t know about you buuut my family members were passing out on the couch last night at about 8:30pm.
I LOVE the day after Thanksgiving. No, not because of black friday sales, even though those are fun. That sh*t CRAY though that stores opened yesterday at 6pm. RUDE. What about those employees and THEIR thanksgiving dinners with their families?!
Anyway. I love today because we get to eat the LEFTOVERS!! With next to zero of all the hours and hours of prep it took to make all that food. This year my aunt forgot (?) that we’ve been making 2 turkeys the past couple years due to my *gluten problem*. Soo we ended up with a stuffed 14 pounder and a spatchcocked 16 pounder. That’s 30 pounds of turkey. We had 8. people. for thanksgiving. Turkey is going to be coming out of my ears by the end of next week.
Good thing I LOVE leftovers!! But no, we’re not just talking simple repurposed leftovers like heating up everything you had last night for the same dinner again. Though that is what my family does (and I’m sure yours too) every black friday/day after thanksgiving. We’re talking jazzed-up, fancy-schmancy flavor bombs going off on your tastebuds when you just can’t take eating another plan slice of turkey because the gravy’s all gone but you have 10 lbs of it left. Because this will probably be me in a week. Or two. (See above my leftovers hash from this morning. With chimichurri. Because duh.) So here are some other bomb.com leftovers ideas for ya!
Stupid Easy Paleo’s Thanksgiving leftovers sandwich and Leftover Turkey Yellow Curry.
Paleo Newbie’s Sweet potato waffles with turkey. Think chicken and waffles – paleoified and thanksgiving style. Pop on some cranberry, applesauce, or maple syrup!
Turkey cobb salad with cranberries. Nix the cheese and you’re good-to-go paleo.
Paleo pumpkin coconut turkey chili.
For leftover stuffing: make a hash. SO GOOD. Just heat it up in a skillet and pop some eggs on it for breakfast! This is my favorite leftovers hack for my butternut-apple-bacon thanksgiving stuffing.
Leftover sweet potato casserole? Make some sweet potato pancakes.
Brussels sprouts hash with sweet potato and bacon. and eggs. Top with avocado. And or siracha.
Make a frittata like Paleo Parents did. Throw all the leftovers you want in to a bowl and mix. Whisk a bunch of eggs and stir them in. Bake. Done. Do it with my stuffing. DO IT.
Leftover canned (or fresh) pumpkin? Pumpkin Cashew Coconut Curry over Coconut Rice from PaleOMG. Sub leftover turkey for the chicken and you’re getting a 2-for-1 leftovers deal here.
Orange cranberry coconut flour muffins from Detoxinista. For those pesky leftover cranberries in your fridge.
Leftover pie smoothies. Take a slice, throw it in the blender with some coconut/almond milk or yogurt, and blend. I won’t judge you.
When in doubt, make a sauce. Or multiple. And dip everything in it. So your leftover turkey is different EVERY time. Try my chimichurri, balsamic-fig compote or onion slaw for starters. Or, you know BACON jam. Or apple spiced bbq sauce. All good choices.
Oh and don’t worry, I’ll have plenty more of my own leftovers-inspired recipes coming at you next week. Hopefully the turkey won’t be coming out of my ears by then. Fingers crossed.
