Can you tell I’ve been feeling it on the feta lately? Feta on everything. Feta on fries, feta on bowls, feta on burgers, feta on all the things and I’m not sorry about it. These Lettuce Wrapped Mediterranean Lamb Burgers are the latest stroke of genius…from a restaurant, recreated at home!
A couple weeks ago I went to the Yankees Orioles game in Baltimore with my family for my brother’s birthday (yes, we’re Yankees fans, born and raised – hate me for it if you want) and we went to this epic burger place in Federal Hill in Baltimore before hand. They’ve got burgers with everything from your traditional stables of beef, chicken, turkey, salmon burgers… All the way to elk, duck, lamb, alligator, and crazy stuff like that.
They also have a build your own burger special let me tell you, I built the most epic burger when I was there. So good, that I needed to re-create it at home because I’m not going to drive all the way through DC and Baltimore traffic to get it 😂 maybe when I go to expo east this month. Maaaybe.
Anyway. Details of this epically loaded Mediterranean lamb burger: Start with some ground lamb that you’ll season with Greek seasoning. Top with caramelized onions, fresh sliced tomato and cucumber, feta cheese, a homemade olive spread, sandwiched in between a lettuce wrap bun, and serve with sweet potato fries because DUH they are the best. But I wouldn’t say no to serving these with my Greek Roasted Potatoes either! I’m going to warn you upfront that you probably won’t be able to eat this burger without a fork and knife. But I’m not sorry about it.
- 1 lb ground lamb
- 1 Tbsp greek seasoning*
- 2 Tbsp ghee
- 1 red onion, thinly sliced
- 1 large heirloom tomato, sliced thick (about ⅓ to ½ inch)
- 1 cucumber, sliced to ¼ inch
- Iceberg or butter lettuce
- Feta cheese in slices
- ½ cup pitted kalamata olives
- 2 Tbsp extra virgin olive oil
- 1 Tbsp oregano leaves
- 1 Tbsp mayonnaise
- 1 tsp fresh minced garlic
- fresh ground black pepper, to taste
- First, in a large bowl, mix the ground lamb together with the greek spices. Form the mixture into four evenly sized patties. Set aside while you prepare the toppings.
- Heat a cast iron over medium with 2 Tbsp ghee. Once hot, add the onions, breaking them up into small slices, and add a small pinch of sea salt to help them cook down. After about 5 minutes, turn the heat down to medium low. Cook an additional 10-15 minutes, until the onions are cooked down to your liking.
- Meanwhile, make the olive spread: combine the olive oil, olives, oregano, mayo, and fresh garlic in a food processor. Pulse a few times until the olives are broken down, but not yet a purée. Season with fresh ground black pepper. Set aside.
- Once done, remove the onions to a bowl, turn the heat up to medium on the cast iron, and place the burgers in a single layer in the skillet and cook for about 3-5 minutes per side, until done to your liking.
- Allow the burgers to rest for about 3-4 minutes.
- Assemble the burgers! Start with the lettuce wrap, then add the burger slathered with olive spread, add some onions, tomato, feta and cucumber slices...and attempt to eat the whole thing with your hands. Serve with sweet potato fries!
