Easy, peasy, one pan breakfast skillet comin’ riiiight up (think about me saying that in a 24-hour diner voice and you’ll get the idea.) This is one that comes together real quick – even quicker if you’ve got leftover roasted sweet potatoes on hand, which I highly recommend doing! It’s basically a throw everything in a skillet kinda deal, throw some greens in at the end, some eggs on top, and hot sauce, and call it a meal.
Ain’t nothing wrong with that when you’re busy af and just trying to get some food on the table in a flash that also 1) tastes delicious and 2) makes you feel great from the inside-out to get your day off to a great start! And hey, I will not judge you if you eat this for lunch or dinner (or three times in one day) instead of breakfast. Been there, done that before. Come to think of it, that’ll probably be me this week!
- 2 Tbsp ghee or coconut oil
- ½ red onion, diced
- 2 cloves minced garlic
- 1 package your favorite breakfast sausage (I used Pederson’s Farms here!), crumbled or sliced
- 2 cups leftover roasted sweet potatoes
- a few handfuls of arugula
- 1-2 fried eggs per person, for serving**
- Pinch of sea salt and fresh ground black pepper
- Optional: you can also add in a tsp or two of your favorite breakfast seasoning blend!
- Heat a large cast iron skillet over medium and add your ghee or oil. Once hot, add the onions and garlic with a small pinch of sea salt, and sauté for about 8 minutes, stirring every so often, until the onions start to become translucent.
- Add the sausage and cook until it starts to brown, about 5 minutes.
- Stir in the sweet potatoes and allow them to warm, a few more minutes. (This is also where you would add the optional breakfast seasoning) Meanwhile, fry up some eggs! Or see below for how to cook them in the skillet with the rest of the ingredients**
- Add the greens last just so they are slightly wilted.
- Serve with fried eggs and hot sauce!
