Another burger that looks like it’s nearly impossible to pick up with two hands and shove in your piehole. I guess that’s just my thing over here – making burgers for you that seem too big to eat, but are exploding with flavor. Just grab a fork and knife and get in there, I dare ya. And let me tell you, you will not regret it with these Pineapple BLT Burgers with Spicy Mayo.
I honestly have zero idea why I thought to make pineapple buns with a BLT-inspired burger. But WOW was impressed by this flavor combination, you guys! The saltiness of the bacon and burger, paired with the caramelized sweetness of grilled pineapple, creaminess of the avocado and spicy mayo AND broken up with the freshness of lettuce, tomato, and onion? Pure amazingness.
I experimented with a couple different burger variations here – chicken, beef, and turkey, and I liked the dark meat ground turkey the best with these flavor combinations. But you do you, kiddo! Whatever protein floats your boat, you do your thing. Or just combine the grilled pineapple with the BLT and skip the burger. But why the heck would you do that?
Oh, and do me a favor – pair it with some sweet potato fries. TO. DIE. FOR.
Mmkay I’ll stop teasing you and give you the recipe already. Enjoy!!
- 1 lb ground turkey (I used dark meat)
- 1 Tbsp coarse ground mustard
- 1 tsp sea salt
- 1 tsp minced garlic
- ½ tsp minced ginger
- ½ tsp black pepper
- 1 medium pineapple, peeled and cut into ½ inch thick rings
- 1 medium tomato, sliced thick
- 1 avocado, sliced
- ½ red onion, sliced thick
- 4 strips of bacon
- ¼ cup mayo
- 2-3 Tbsp sriracha
- Small pinch of garlic powder
- 1 tsp lemon juice
- If you’re using a grill, now would be a great time to preheat it!
- Prepare the burgers - combine the ground turkey, mustard, sea salt, garlic, ginger, and pepper in a bowl with your hands and form into four even-sized patties. Set aside and wash your hands.
- Make the spicy mayo: combine the mayo, sriracha, garlic powder, and lemon juice in a small bowl. Set aside.
- Heat a up your grill or large cast iron skillet over medium heat with 1 Tbsp avocado oil. When hot, add the burgers, pressing them down slightly with your hands so they’re not too thick. Cook for about 4 minutes per side, until cooked through to your liking.
- While the burgers are grilling, prepare your pineapple. I like to grill mine on medium heat for about 2-3 minutes per side, until light grill marks appear. Set aside to cool.**
- Once the burgers and pineapple are done, allow them to rest for a few minutes while you cook the bacon in a medium skillet until crispy, about 5 minutes.
- Meanwhile, assemble the burgers! Start with a slice of pineapple, top with lettuce, a burger, slices of onion and tomato, avocado, and then bacon on top. Drizzle with spicy mayo. You could try putting another pineapple slice on top...but it may be pretty hard to eat with your hands!
