In high school my friends and I used to go to Panera all the time, and I’m pretty sure I only ever ordered the Strawberry Poppyseed Chicken Salad!
Real talk: blogging (and the internet in general) can be really, really annoying sometimes. I’ve been having quite a few issues with my site lately – hopefully you haven’t been able to tell! But things have been posting at wonky times, not posting at all, or posting with completely the wrong title and no text, pictures, or recipe at all…which is exactly what happened with this post. I’ll spare you the details, but let’s just say it takes quite a few hours to actually pull one of these posts together, between shooting the recipe, editing the photos, and writing up the blog post/getting it scheduled. Needless to say when I opened up my blog this morning and saw that not only did the recipe not post at all, but only one picture had posted with no body text AND with completely the wrong title…let’s just say there were quite a few F bombs dropped in my house this morning.
It’s fiiiine everything’s fine. I’m just going to throw together this salad and everything will be better.
That’s the beauty of this recipe – it’s a create your own adventure. Throw in whatever you favorite summer fruits are, find your favorite poppyseed dressing (mine is the Tessemae’s one!), some crunch (walnuts? almonds? cashews? macadamia nuts? whatever you like!) and devour. I even threw some everything bagel seasoning to spice the chicken up a little bit. I’m sure this would be great with chickpeas too!
- 2 large handfuls mixed greens
- 4-6 oz leftover sliced chicken
- fresh sliced strawberries
- blueberries
- sliced peaches
- small handful walnuts
- crumbled feta cheese
- your favorite poppyseed dressing
- Throw all the ingredients together in a bowl, toss with poppyseed dressing, and devour!
