Hands down my new favorite recipe that I make every week along side my Lemon Garlic Roasted Broccoli is this Stupid Easy Buffalo Roasted Cauliflower. You guys know I love buffalo everything and anything (and I’m pretty sure you guys do too, which is obviously why we’re friends you keep asking for more buffalo recipes!), and the only thing that can make these babies better is obviously….RANCH.
Plus, who doesn’t love a two-ingredient buffalo sauce? And the great thing about this stupid simple recipe is that the sauce can be used on pretty much any vegetable, potato, or heck, even protein – and you’d have instant buffalo fill-in-the-blank. I’ve used it so far on butternut squash, sweet potatoes, white potatoes, parsnips, and carrots.
Real talk: live has been f**king insane lately. And it’s only about to get crazier in March because every single weekend we have a championship meet for swimming. YIKES. When we get super busy, it’s really easy to just get takeout all the time, to not make time to grab groceries, prepare meals ahead, or make sure your fridge is stocked with nutrient-dense goodness.
You guys all know this. But it’s even more important during times of stress, because your body is already pulling from reserves, whether you’re missing out on sleep, missing out on self care, and just in general not having enough time to take care of yourself. It happens. So you need to MAKE time to do little things to take care of yourself, like making sure you’re fueling up with nourishing food during these stressful times, so you can feel as good as possible and not like you got hit by a mac truck when you wake up in the morning..
So yes, you probably don’t have a lot of time to do an extravagant, all-Sunday-long meal prep, make a different recipe every night, or even be that creative. I get it! Game plan: throw a protein in your slow cooker or instant pot, roast up some of this Stupid Easy Buffalo Roasted Cauliflower, and maybe some Lemon Garlic Roasted Broccoli, bake some sweet potatoes (you could even do all three of those at the same time!), and make sure you have some greens on hand. Lunches (or dinners) for the week, DONE. In less than an hour. Keep it simple, stupid. I’m not saying YOU are stupid, it’s just that acronym everyone loves to throw around. KISS. Right?
- 1 head cauliflower, core removed, and chopped into bite-sized florets
- 2 Tbsp melted ghee
- 2 Tbsp The New Primal Buffalo Sauce
- 1 tsp minced garlic
- ½ tsp sea salt
- optional, for serving: Ranch Dressing
- Preheat the oven to 375 F. Line a large baking sheet with parchment paper.
- Combine the ghee, hot sauce, and minced garlic in a small bowl and mix until the ingredients are well incorporated.
- Place the cauliflower florets in a large bowl and toss with the sauce mixture until all the florets have some about equal amounts of the good stuff on them!
- Spread the cauliflower on the lined baking sheet and sprinkle with the sea salt.
- Bake for about 30-35 minutes, until the cauliflower is easily pierced with a fork, but not burned or mushy.
- If desired, serve with paleo ranch dressing (but I mean, why wouldn’t you?)
